Birthday`s report

So yesterday was Happy Birthday Eva day! 

And it was so happy and awesome. Small report of it:

  • At midnight of the 3rd March got greetings from my love Una and brother Aivis.
  • Went to get a tea. Yes and met Jakob,Agate,Benjamin,Simon at the middle kitchen. Got greetings from them. Small dubstep and beer party with little dances till 2am.
  • Ryslinge family (team members) came in my room in the morning and sang the happy birthday song. the best way to wake up!
  • went to the nearest city, all shops were closed, but after it had good walk to school.about  7 km. fresh air and sunny day.
  • some yoga
  • started to make a birthday cake. It was gluten free cause I`m allergic to wheat stuff. Thanks to Marie, she saved me. I`m bad in the kitchen hah. She helped with recipe and cooking. Together we made 2 cakes – both chocolate but one was with nuts` flavor (because cacao ended :D) . Here goes recipe:

    Ingredients:

    • 6 1-ounce squares coarsely chopped semisweet chocolate
    • 1/2 cup (1 stick) unsalted butter
    • 3/4 cup sugar
    • 3 large eggs
    • 1/2 cup cocoa
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla
    • the second cake had hazel nut flavor
    • For Glaze: 
    • whipped cream with coconut crumb on the hazelnut – chocolate cake
    • coconut crumb with
      1. Melt 6 ounces of chopped chocolate and butter in a heavy saucepan over medium low heat. Stir until chocolate and butter are melted and smooth.
      2. Add sugar and salt and reduce heat to low. Cook while stirring for about one minute, until sugar starts to dissolve.
      3. Remove pan from heat. Whisk in eggs, one at a time. The mixture will look smooth and glossy.
      4. Use a mesh hand sieve to sift cocoa into mixture. This prevents lumps. Whisk until the cake batter is smooth.
      5. Pour batter into prepared pan and bake in preheated oven for about 25 minutes. The center of the cake should be just firm to the touch, but be careful to not overbake the cake or it will be dry.
      6. Cool in the pan on a wire rack for 15 minutes. Invert the cake on a plate.
      7. Put a glaze on.

  • next we had a dinner. it was so cozy. candle light, fireplace, “happy b – day Eva” words on the tables by Niklas. birthday songs in latvian and in danish.
  • volleyball game in the gym
  • dancing and game party at Valhale for 3h with cakes and Irish coffee (brown sugar, whiskey, coffee and whipped cream)
  • party at Poulsens – dancing with 80`s and 90`s music
  • skype call with Seattle
  • fell asleep with happy mood around 5 am.

One of the BEST birthdays I`ve ever had!
